Because ever since 1996, the year the company was established in Mogoro, Sardinia, we have had just one purpose: to shine a spotlight on one of the most mouth-watering specialities our island has to offer, bottarga. Because when you start with salting, curing and drying salmon, a product that doesn’t come from Sardinia, making bottarga available to the world is a significant challenge.

How?
Combining millennia of tradition with state-of-the-art technology, the knowledge of our forefathers with the tools of today. Hence why we use only traditional techniques in our production processes, ensuring the simple pleasures and secrets of an ancient delicacy are never forgotten, but at the same time we’ve also decided to have a strong online presence to spread the word about bottarga to every corner of the globe where good eating is not an option, but an absolute must.
And there’s little doubt: it’s hard to resist that faint salty taste which evokes the scent of beaches, crystal clear waters and the sun, even on a cold wintry day when the seaside is but a distant memory.
But at Blue Marlin we’re in no doubt whatsoever: just a little morsel is enough to tickle the taste buds of the finest palates and make them fall in love with the only delight that’s capable of competing, with no fear of disgrace, with the most refined caviars, bottarga.
